as far as physical dimensions go, offroaders/enduro bikes seem to be pretty similar to supermotos. would you be able to simply fit smaller wheels to an offroader to make it supermoto-ish. Sorry if this is a really stupid question, I don't know much about supermotos

Im not sure if this works as im new to all this but still, wouldnt a smaller wheel work if centre part of the wheel is the same size as the old 1? (think is the hub or something dont know)

Also becareful as it might affect your speedo..Bigger wheels cover more distance so as they turn they cover more of an area than usualy but going at the same speed meaning your actually going faster. So i dont know if small wheels will make a differance but i no big ones do.

The original idea of a supermoto was that it was an off road bike converted for road use.

As well as road orientated tyres, people generally go for a better brake up front. Also consider stiffer suspension if you've got it set up for trail work.

Yes, speedos will be different; a lot of people just use push bike ones; mx bikes wouldn't come with a speedo anyway.
