With that in mind, do you folk torque to manual specs?

Mine quotes 43 Nm for my drain bolt. I nipped it up tight but didn't want to force it further. My best torque wrench only goes up to 25Nm and having tested it I wouldnt want to put that level of force into such a bolt.

Overthinking it sure but as title says - I am known to strip.

Service manuals are not infallible with respect to torque values, and occasionally are subject to revision. As regards your drain bolt, 43 Nm might be fine if the shank diameter is 18 or 19mm (unlikely). In my experience, an appropriate torque would be closer to 30 Nm for a 12mm drain bolt; 35Nm for a 14mm drain bolt. I think it unusual to find a torque spec in excess of 35Nm on a motorcycle drain plug.

Use a dowty washer, nip it up so it's snug.

My VFR manual specifies 30Nm but I don't do it up anywhere near that tight with a dowty on.

Nm? what sort of limp wristed faggotry is this?
what happened to the rugged masculinity of foot/pounds?
we must all be careful to not to overtighten stuff especially
a steel bolt in an alloy casing.
31.7 foot pounds (43poofmeters) sounds a bit OTT to me
I'd go stinkers dowty washer snug it up route

Its just got this standard washer on it this time.

Ran the bike for near 30 mins stationary but not ridden it yet.

Foot/Pounds is a different species.

We use torques and torque wrench/tools to ensure fasteners are correctly tightened.

Mostly to stretch the bolt to a length 'within its elastic limit' that will create a constant tension between the head of the fastener and its threads. Where the friction between the thread, bolt head and component prevent the bolt backing out. Vibration overcomes friction and bolts can work loose. Locking mechanisms to prevent that are.many and varied.
The style of thread has some effect on retention too.
Lubricant also can bebgood or bad depending on applications.
A lubricated bolt can crush fragile components such as housing flanges and gaskets, if the incorrect torque is applied.
Most proper OEM specs will state if a fastener is lubricated for assembly or dry.
They torque for lubricated fasteners is significantly less than for dry fasteners.
Torque for drain plugs is critical only because if the gasket leaks the collateral damage is costly. Either losing the sump, plug or just the whole engine block.

The length of the wrench used is important too.
There are plenty of Shade Tree mechanics out there who do not factor this in when blootering machines together.

Tight as fcuk is too tight and gently tight is too slack.

Torque wrench will give exact torque.

I bought a torque meter.
It's not too bulky and hasn't went out of calibration in the four years I've owned it.
I check my other torque wrenches against it.
