AMD Athlon XP 2500+ / 2600+ / 2800+ (or better)
* I have found them new, here for approx 65 > 85 quid so obvliously I am after a cheaper one. Does not have to be new, has to be good working order. (with fan)

DDR RAM PC2700 333MHz
* Total, I would like one Gig (2 x 512MB) but will settle for 512 for now till I get the cash for more. I'm skint, so the cheaper the better. Not bothered about the make etc, unless it is well known, worldwide to be absolute shite.

Will add / change list as I get parts / ideas

Network Card 10/100
* My laptop has LAN, my new PC has LAN and I want to connect the three together (third being my old PC).

Will I need two seperate LAN cards or one with two ports?

You could get two cards, but it'd be better to get a hub or switch.

I've most probably got spare cards around, might be able to do something with the memory, but not sure if I got 'owt spare.

Yep, that should be fine.

Remember you'll also need 3xpatch cables (not reversing) if you don't have them.
Can be picked up for bugger all from any decent computer place.

What is the difference between this

This says it's a patch cable.

and this

This says crossover cable.

A crossover cable is purely used to connect two computers together.

If you do it this way you do not require a hub, but you can only connect two computers.

A patch cable is a normal straight through cable for use with hubs.
