I'd probably miss out the acetone to be honest. It's really good at destroying rubber seals if it gets into the sump.
But yes, whip the head off it and see how much damage is done in there. If the barrels are seized on, soaking in some form of light oil for an extended period would be an idea. I've also known people to pour hot engine oil down the affected cylinder.
You're looking at a minimum of a rebore and the next size up piston kit. Handily www.davidsilverspares.co.uk has LOADS of spares in stock for them and they are well cheap. They have genuine honda +0.25, +0.5 and +1.0 piston kits. Both sides for £18. That's mind bogglingly cheap!
If the head, cam, crank and casings are good, there is no more than 1mm deep scoring on the barrels and the frame isn't rotted to buggery, sounds like you've got yourself an ideal project .
