Not metal, but one of my favourite cover bands are Me First and the Gimme Gimmes. This lot do well produced punked up covers of all sorts of stuff. Their albums are themed, so each one is a different era of genre, from songs from the musicals to R&B!.

"Have a Ball" is one of my favourite albums, with classics from Elton John's "Rocket Man" to Simon and Garfunkel's "I am a Rock", which both sound better punked up IMO.

The Rage Against The Machine - Renegades of Funk album is all covers, with a special mention to their version of Bob Dylan's "Maggie's Farm".

A recently released cover, I enjoyed, was Buckcherry's version of Icona Pop's "I Love It". Their version is retitled "Say Fuck It" though.
