There's a gun shoppe up the road that I'll try tomorrow, but anyone who's had this done is welcome to expound on the experience.

What I did for a mate once...
Remove firing pins and drill out the holes as wide as you can.
Cut down each side of the breach so it would rupture if fired.
Mig weld an old nut halfway down the breach in each barrel.

If plod complains invite him to give it to a Police Armourer to re-activate. £100 quid bet to make it interesting.

Any deactivation work will need proofing by the Birmingham proof house ( I think its that one). An RFD should be able to advise. If you don't get it proofed then in the eyes of the law it's still a shotgun regardless of what work you've done to it.

How old are the guns? They may not need deactivation if classed as antique.

There are different specs for deactivation depending on when the work was originally done. Early deacts are usually fully stripable and will cock and dry fire. More recent ones are usually almost fully welded up (in the case of automatic weapons).
