Can anyone tell me how to take the seat off my bike?

When I first bought it, the dealer showed me how (I have now forgot Laughing ). Something to do with the helmet lock just under the seat.

It's a Lexmoto Street 125 (suzuki en 125 copy)

The helmet lock usually accepts a key (usually the ignition key)...
When turned in one direction it opens/closes the helmet lock, and when turned in the opposite direction it should unlock the clasp/clamp holding your seat down.
Usually just turn (and hold) the key, then lift the seat

Yup, but IIRC, on that bike there's a lever on the other side that needs lifted at the same time as turning the key. Give it a good fingering, see what you can feel. It'll seem really obvious once you've done it once.
