Bare in mind that if you 'de-restrict' it you will need to re-register it with the DVLA as a motorcycle, inform your insurers, and will need a minimum of a provisional motorcycle licence to ride it.

If it's a Chinese GY6 clone (which it appears to be) then it'll be a combination of the following.

Washer in variator.

Carbs (usually a thing in the needle).

CDI (can normally snip a wire).

Remove any of them present and that whopping 2.4BHP will let you get to about 35mph on the flat with a long enough run up.

If you want a better increase then you need an 80cc big bore kit. With one of them and the right carb/roller/clutch setup you can manage 45mph on the flat with a long run up.

Or just buy the 125 version and you can do 55mph.

Your not going to get much more by de-restricting it and any copper that catches you doing over 30mph will know it's de-restricted. If your old enough then just get a 125 instead.
My friend had a sym jet though and it was pretty good.
