Op has long gone at this point, but non-sprung pegs are slightly more likely to snap if you drop the bike than sprung pegs. That's realistically the biggest difference.

In my experience sprung pegs bend back about 80% of the time. You do usually lose any feelers / hero blobs screwed into the pegs.

(Have dropped almost every bike I've ever owned at least once, slowly, into the ground, excepting scooters.)

Apologies if I get a bit nerdy here. I'm a stress engineer so this sort of thing interests me.
Is your sratement based on experience of broken pegs or based on technical opinion? I'm thinking a sprung joint would be structurally weaker than a solid joint since it has to comprise of a hinge with a pin and a spring. There are several small parts there that can fail. On the other hand the sprung peg may deflect and therefore avoid the impact, hence not breaking.
I guess it depends on how the non-sprung pegs are attached? If they have a bolt that can fail, etc. (I know very little, only having owned sprung pegs).

If you're looking at "race" unspring pegs, they're usually designed to snap before they bite into the tarmac and make the bike flip. becuse safety. It's also desireable that a footpeg snap instead of somehting more expensive. Many have a very diliberate stress-concentrating groove. You'll likely see a simialr groove on aluminium clutch and brake levers.
