I'd say Bikesafe is useless for commuters and actually aimed squarely at weekend riders on open A roads. They'll expect you to stick to the limits through villages and towns, but outside of that you're okay to stray a little over the limit without them going all Judge Dredd on you.
Any decent instructor should be telling you to ride at a pace you're comfortable with rather than follow me and keep up (unless you're on a track). I had quite a few years off the bike and when I came back to it I did a one day with an instructor 1:1. He was watching what I was doing, correcting bad habits and giving advice. I believe BMW used to do a Back to Biking course a long time ago.

Was a colleague and I talked about opening our own up and I quite fancied the challenge of running a school.

The other school is still going.
