1. Could you explain to me please, what training materials I need to purchase (books or PDF) to prepare well for the Motorcycle Theory and Hazard Perception Test for category A?

Will it be enough if I buy this?
However, this book is on DVD, but I don’t have it.

Or this. But it's 2016 and no Hazard Perception Test.
So please advise me where and what to buy?

2. Does the practical test differ between the categories A2 and full A? Maybe it can be easier to pass on A2 if you are not confident in your skills? Or it does not make any sense and you need to go for on full A. (I'm 40 years old)

Its exactly the same, only difference is the bike, even though the different between a A2 and A bike is minimal.

Go for Full A everytime, then you can choose out of everything what you want to ride.

There is no need to buy stuff for the motorcycle theory test, you can do a mock test, just search motorcycle theory test on google, and you can have a go yourself. Good thing is that at the end of it it will tell you what you got right/wrong

I bought the on-line access for 7 days https://www.dvsalearningzone.co.uk/.
7 days should be enough to learn all the stuff, learn rules of the road and get familiar with hazard test. I suppose you have some car driving experience ? Then all the learning you should focus on is the part about motorcycles (e.g. question about why to avoid white strips during rain etc.).
If you are 40 (I'm similar age) I suggest full A (Direct Access). A2 is pointless, you will do the same tricks on the exam just on a lower power bike (47HP but not necessary much smaller in size/weight) and then you will be also limited with bike you want to buy.

I bought an app for the highway code that did various tests. Every time I went for a crap I did a few more questions Smile

The video test thing? Just go on the DVSA website and do their mock tests to get an idea of what to do.
