VFR.
1200 is massive fun but as mentioned, thirsty.
They can be fun. You can throw a 750/800 around with surprising results. Plenty of options out there to play with the suspension, apart from basic mods (PAIR, snorkel, flapper etc) don't bother dicking with the motor. Cheap for what you get if you can throw a spanner or two around.

Will smash the miles out without blinking an eye, mine hit 120K the other day. I'm commuting on mine at the moment as I'm doing a top end rebuild/replacement on my 125 commuter.

Have you looked at the KTM 990 SMT and the Ducati Hyperstrada?

Both slight oddball bikes that I'm currently looking at myself but both comfortable and upright for commuting with the ability to have luggage and then oversized supermotos for the weekend. Slight downside may be having high and wide bars if you do a lot of narrow filtering.
