So my exhaust has rotten to FECK on my YBR. It's a 2015/ 2016 model (not the custom model)

Sounds like an absolute bag of shit and it's hanging on for dear life atm. I've managed to source one of very few affordable ones from a site called WeMoto for around 80 quid.

I'd rather not the additional expense (and hassle) of lugging an exhaust down to my usual (trusted) garage in town and paying someone to lob it on for me if it is possible to do it myself.

I'm not the most technically minded person, in the sense that I don't really do any mechanical stuff and as a new rider - L plater of only a year and change I've often shied away from it and dug into my pocket each time to pay someone to do it.

But I do want to learn as I've said that I'd like to start working on my bikes. I've the Haynes manuals and the socket wrenches (somewhere) knocking about!

I was wondering how easy (or difficult) it would be to take the old exhaust off and fit the new? Also what sort of pitfalls should I keep an eye out for etc.

Full exhaust, just headers, or just the mid pipe and can?

The bit you’ll likely really struggle with is removing the header bolts (see a few recent threads on here). If you’ve got an O2 sensor, they can be a bit of a ‘mare to remove too.

The rest should be fairly straightforward.

Its a one piece system.

They use 2x M8 cap head bolts at the exhaust port/head
If they're not seized, or rotted so much the hex key just spins
removal of the exhaust system is easy.

If they come out OK
Yours will probably have a rubber pipe from the AIS down to a
spigot at the beginning of the silencer which is easily pulled off then its just 1 bolt at the rear and the whole thing can be removed.
I usually support the silencer with say a box to help refit it
new seal and bolts is good practise.

New copy exhausts are cheap enough but the non AIS ones are even cheaper so I'd just buy cheap, blank off the AIS bollox and save money.

This is the key. Mine were... fun... to get out, and involved lots of force. You don't want to go down that roaqd unless you can help it. Lots of PlusGas and heat cycles up to temperature. Put PlusGas on when slightly cooled from hot, EG, it doesn't flash evaporate when you apply it. This is a days/weeks thing, not a 10 minute thing. Even then there is a chance you'll get to learn all about bolt/stud extraction.
