I have a zx9r in the UK and a cb750 for plodding about in Portugal.
First time I get on it, yep it is missing half the power and half the handling, if I go on the mway, yep it's not fun, I tend to stick to 60-70, and in twisty A roads, yep not safe above 80, it's wobbly ASF actually, but it's loads of fun in the mountain roads, and it is so without being scary, I rarely wot it even, it doesn't really compel me to do that.
After some readjustment, it feels about right and I'm quite happy with it (ofc I wish it was a z900 though, but mostly for the handling).

If you're swapping for a modern bike, I'd say you won't notice it at all unless you're sport touring with a pillion.

From 100bhp to 75 naked you will notice a difference, but will adjust and still be able to overtake decently enough.

I rode a number of 110bhp+ bikes. After a few years of having no bike I got a bike that ran at 37bhp (Ninja 300).

I only notice the loss in power when:

1. trying to overtake a car/race a lousy hatchback - when overtaking if the car driver puts their foot down I better pull back behind them as there's no chance in making a successful overtake at that point. Opportunity to race doesnt end well for my pride/ego either.

2. Riding [rarely] on the motorway where the torque is very low when trying to pull from 80mph (bike screams at red line creeping towards 100mph). Will definitely not be able to speed up to 100mph or even 90mph with sufficient torque to get there quick as it's a baby machine with low bhp and less torque. Watch the Audis shoot past me as I ride in lanes 2 or even at times lane 1.

The above two defeats (combined with ego and lust for my old heavily uncomfortable Kwak 636) has me trade it in for another 2005 636 (115bhp). My experience of the 636 is that it pulls hard in at any speed I've ever done on it, seldom gets out-accelerated by cars and can pretty much own the motorway until stuck at 160mph (which I never do).

Using the 300 in London I barely noticed the loss in power though (when not up against any other driver) because I accelerate to 40-60mph comfortably and the machine is nimble enough to weave through traffic and even get the better of most supersport bike/their riders.

But there are instances like the above when I'm reminded it's a baby bike and I'm used to power sent from the gods to the crank.
