I have an ongoing issue with hesitation in low/mid range when accelerating that feels like either a fueling issue or a vacuum leak.
I pulled the carbs at the weekend for a clean as well as the rubber carb inlet boots, which had flattened o-rings completely flush to the top of the o-ring groove where they clamp to the inlet manifold.

But I also had a check of the stick coils primary and secondary resistances which were spot on, however for the timing pickup coil the manual states 552 to 562 Ohms, I am getting 526 which is a little low, could this be causing me issues?

Coils tend to either work or not work. If it were defective it just wouldn't work.

Pick up coils/pulsers usually have some lattitude in resistance in my experience
as all they have to do in use is provide a pulse of sufficient voltage above a
certain threshold to trigger the sparks.
You'd really need to use a scope to observe it under varying conditions
to see if it's up to the job but some meter tests can give indications

I'll assume you made the resistance reading when cold?
do it again when hot to see if there's any significant difference as
some pulsers have been known to work OK when cold then break down as they heat up

I can't see the pickup coil being involved with a hesitation.

You found one potential problem in the fuelling already. I would look for more there. If it's at the point where one set of O-rings are either cracked, rotten, broken or flat, then various other ones probably will be too.
