I’ve had my eye on a used, naked bike on a dealer’s website which has been tagged as ‘deposit taken’ for a few weeks now, although I’m not entirely sure how long a dealer will hold a bike. At some stage the dealer seems to have swapped the tank from a yellow one to a red one, presumably because yellow wasn’t popular (although I’d take it). What are the implications of a colour change with respect to the V5 and the DVLA? Paperwork nightmare, or quick amendment?

Quick amendment iirc enter new clour on V5 and send it off.

They change it at the MOT these days.

One way to see if they actually MOTed it I suppose.
