Take a long look. Electrical problems can do/cause weird shit. It took me a while to track mine down, same line of thinking as you had to be fair, that it wouldn't run at all. It may not be, but you're describing exactly what mine had, it was shorting out when it got hot. Your's is doing something silly when wet. If you're sure you've eliminated manifold leaks, valve clearances are set etc, it's going to be electrical.

Agreed, something as simple as a failing HT lead can give the appearance of a good spark but play havoc with the way your lump runs, or doesn't.
Healthy engines, for all the gizmos attached to them, are fairly simple beasts - too much air, too much fuel (goes without saying lack of one will affect other) or something affecting spark.
If you really have an uncompromised air/fuel delivery system with a good air cleaner and a carb that is set up correctly you are left with electrics. My gut says that if it can handle a load but only if you sneak up on it then something is on it's way out.
Start with LT and HT connections and make sure there isn't any damp in them, if necessary remove HT lead and stick it in the airing cupboard overnight/ through the work day to make sure there is no damp in it,...

Sorry lads forgot to mention i fixed the issue a few weeks back, was the coil breaking down under load thanks for the help!
