Does anyone know of any mechanicing courses specifically aimed towards bikes? I am already a qualified Diesel mechanic in the army, but I am wanting a better idea on working with bikes.
If anyone knows of one could you please let me know some details?

Try ringing your local college or uni about it. Failing that ask around at your local bike dealers. Someone might know someone.

I don't think working harder for less wages is a great career move, stick with diesels....

Not really true, the trucks and tanks I work on are pretty crappy and takes alot of hard work to sort them out, with very little financial reward. I would mainly be working on them in my own time as more of a hobby as I am looking at getting out of mechanicing all together.
