Hi
Depends on how big you are, gearing, exact model, etc but they should indicate more than 160. I have had mine round to 185kmh on the flat, but I am fairly skinny and it is an early one running the larger carb as standard. And the speedo is a compulsive liar.
If the power valve was sticking then I would expect it to struggle to go past 140~150 kmh indicated.
On mine an incated 100mph / 160kmh would be about 10000rpm indicate. Only 750rpm off the red line. Far beyond the 3000rpm you say you cannot use.
All the best

Hi
Red line is the point where it is safe to go on a regular basis. Going into the red is taking a risk of engine damage, and normally with no great benefit. Not sure on your but from memory of the older ones when they published a claimed peak power then that was at bang on the red line at 10750, and from the road tests power dropped off rapidly after that. Basically next to nothing to be gained by revving it into the red except the higher chance of blowing the engine up.
Doesn't matter where the red line ends. Where it starts is the important bit. Put it this way if they colourd the entire dial red from the start of the red line all the way back round to zero would you want to rev it hard enough for the needle to do a complete circle and get to the end of the red (say, 20000rpm)?
All the best
