Seeing that you're pretty much in the centre of London - go outwards, some way  .
Down to cornwall would be nice enough, over to wales, up to the lake district?
Can always just head out a random direction, find a B&B or whatever mid afternoon to make sure you're not stuck too late, do some more riding going back to the B&B for the night, then repeat . |

Take the opportunity to travel to somewhere you have never been.

Cornwall/Devon/Dartmoor
Wales
Lake District/Yorkshire Dales (highly recommended - not biased )
If you can, up to the Highlands. Excellent scenery up there, some of the best in Europe without a doubt!
