I have a restricted UK NSR 125 2002 Model. Top speed of around 75mph. I have had the carboretter out and there is no restrictor plate between the carboretter and reed valve. I have took the exhaust off and there is no restriction there. Does anyone have any ideas how it could be restricted? Could it be the main jet on its own that could causing it to be restricted?

The frame number tells me that is definately a UK bike so it doesn't have any CDI restriction? Any help appreciated, thanks.

I'd expect that you're not seeing the carb restrictor and the exhaust restrictor. UK NSR's do 75mph as stock with both the restrictors in place, so it very much sounds like you've got both the restrictors still in place.

Did you take photos of the exhaust when you had it off, and photos of behind the carb when you removed the carb?

It is possible that your cdi was swapped with a restricted one at some point in its life?

But to be honest I'm inclined to agree with ste, you may have just miss judged what the restrictions look like. My NSR125 did similar speeds when it was restricted (80mph was fastest but I was 10kg underweight at that point Laughing).
