I sold my bike on Ebay the other day, and the buyer is sending a lorry to pick up my bike (and others he bought) and taking it back to Hungary.

What do I do with the V5 when it is being exported?

That link does not really help you as it is not you exporting it. Have a look at section 10 on your log book, it explains it there. It also tells you to look at guidance notes (which you may or may not have) if the buyer does not have a GB address.
