Some of you might be too young to remember this( Evil or Very Mad ) but when milk used to come in glass bottles, delivered by the milkman, you used to have to shake full fat milk, to mix the cream that had separeted to the top.

The question is this;

Why does milk not separate anymore?

I mean, i'm sure it still probably does, but why do you not have to shake bottles of milk anymore to mix the cream?!

You still do, well full fat milk.

Depends how agitated the milk was en route to the supermarket I suppose, and how long since said agitation that you sample it.

cus its all semi skimmed now ? and thus supermarkets are laughing at most people when they can skim some milk, add in 50% water and sell it on at the same price as full fat milk?...

Not true, I have had a bottle (4 litre) in my fidge for 2 days now, unopened and it doesn't need shaking

Or are you suggesting that it needs to be agitated first?

Because it is homogenised.

The stuff you used to get delivered in bottles at your door was milked from the cow, pasteurised (rapidly heated then cooled to kill any nasty bugs) and put in the bottle. It was whole milk as it comes out of the cow.

The stuff you get now goes to the factory and is skimmed (the fat is removed). They then put enough of it back in to count as the minimum requirement for "full fat" milk and mix it up. They sell the rest of it as butter and cream.

Two things are to blame for this. One is peoples attitude that "Fats are bad, m'kay?". The other is due to nutritional labelling requirements. Milk is NOT a uniform product, different breeds of cow produce different quantities of butterfat and it varies throughout the year.

They want to be able to print "4.6% fat" on the label (might even be required to but I'm not certain on that). The only way to ensure it is 4.6% fat is to take it all out and remix it that way.

We get it from the dairy farm not too far from us - unpasteurized, and if you get there early in the day before they've turned the agitator on in the vat you can just scoop the cream off the top Thumbs Up

Wish we had a milk man, I miss having to leave the tops from fabric conditioner bottles out with the empties so the milk man could put them over the new bottles to stop the birds pecking the foil tops off.
If we had a milk delivery in Blackpool no one would get any milk as some scrote would nick it from the door-step.
I used to love the cream on my cereal in the morning.
