I just got back from uni and found out I need to tax my bike (it ran out on the 28th of February). If i do this over the phone now and then ride around for the next 5 days ( the time it takes for the disc to arrive) without a disc is there a chance some officious t*t will see my bike parked somewhere and call in the bike crushers?

Unlikely. My understanding is that they have to store it for a period first, and they should check with the DVLA before taking any action anyway.

So they'd be able to take my bike away, even though its taxed but not showing a valid disc?

You'd have tax, so they can't do anything along the lines of not having tax, but they can go down the route of failure to display, which is a lot different.

I haven't displayed a tax disk for a year or so now. Never once had any trouble from it, I do keep it on me just incase though.

Dvla can do there enquiries, if its taxed they shouldnt really touch it, aslong as its on there system your ok, although you should really display one just incase

There is an exemption as stated on the direct.gov website (with a catch):-

If you prefer to tax in the last few days of the month, there is now an exemption from the offence of not displaying a tax disc. This exemption covers the first five working days of the month and allows time for the new disc to arrive in the post.

The exemption only applies if applications are made before the current tax disc or SORN expires.

Think you get a couple of weeks 'leeway'. Do it ASAP though. Then it's backdated and you should be OK.
My car ran out of tax loads of times when I was at uni (skint) and never got a fine.

When the tax lapsed on the SV, I posted a SORN form off on the 28th of Feb as I'd lost the reminder. I got a reminder the following day saying I had an additional 5 days to tax the vehicle before I'd get a fine. The received the SORN and I now have the confirmation letter.
