I have an 08 YZ250F and the dealership didn't give me an owners manual. When you change the engine coolant is it basically drain, rinse and refill; or does it need to be pressurized or anything like that?

Drain.
Rinse if you want to.
Fill up to correct level, run engine but do not rev it, just let it idle for a bit. Keep topping the coolant up till it doesn't go down anymore.

I wouldn't even bother changing the coolant on an '08 bike just for the sake of it.

Well you are supposed to sort of bleed the system ie top it up run it on idle then squeeze all the radiator hoses to get any air out of them , then top it up by the amount its gone down by.
