Hi again,

sorry for all the stupid questions!

I need to vary my lunches at work. I can't really afford to eat out every day, but having no fridge to keep things in it's tough to decide what to make.

Cheese sandwiches are getting a tad dull now!

Anyone have suggestions? Doesn't have to be sandwiches, can be anything really. Just easy to prepare the night before!

With no fridge you can always get those freezer pouches type things and freeze those things and stick it in your lunch box to keep your lunch chilled.

Or just buy one of those porta coolers and plug it in I had one of those for coke under my desk as the fridge was shared between 90 people and there was never any room.

A tin of tuna and a tin of sweetcorn - drain both and then mix together in a bowl with some pepper and eat with a spoon/fork or chuck between two pieces of bread.

Healthy and costs a pittance if you buy in bulk (Sainsbury's do six-packs of both).

Chocolate spread sandwiches. Tuna and cheese sandwiches. Roast beef and onion sandwiches. Cheese and onion sandwiches. Chicken and mayonnaise sandwiches. Tuna and mayonnaise sandwiches. Corned beef sandwiches. Chicken paste sandwiches. Chicken and ham sandwiches. Banana and crisp sandwiches. Cheese and tomato sandwiches. Sausage sandwiches. Chicken and bacon sandwiches. Cucumber sandwiches. Pate sandwiches. Chicken curry sandwiches. Tuna, cheese and tomato ketchup sandwiches.

I could go on. Sandwiches are awesome. Very Happy

I try and avoid bread right now, im sure its not agreeing with me any more.

Uncle Bens Risotto rice is good.
100ml of water in the packet, nuke in microwave for 3mins, job done.
All you need is a bowl and a fork, they aren't full of crap and taste good.

Uncle bens products in general aren't bad so look into it.

Go to a local oriental food store and pick up their instant noodles in pots. Not full of shite like ours, not stingy on the veg in some of them either. They are cheap and only require water. Also they do sell great snack foods that aren't made of sugar and additives, so you can stock up and enjoy them for the week.

A big bowl of fruit salad can go a whole week.
Mix in a bowl all different fruits you like, i did pineapple, strawberries, kiwi, mango and orange. Chop up in a bowl and add a fruit juice you like to it, that keeps it fresh and tasty.

Even I, with my hatred of the fishing industry, eat a lot of Tuna now I'm working full time. It really is a very good cheap meal.

Couscous is also good, chuck it in a cup, pour boiling water from kettle til just above it, prod a few times, wedge in a salad with said tuna.

Usually stick in some mayo though or its a bit dry.

As for the fridge issue, I wouldn't worry, I put my meals in my bag the night before and leave them in my bag until lunch time. Still fine.

Big bags only a quid and will do you plenty of meals. My first semester of uni I spent ALL my money on booze, so lived on mixing couscous and gravy powder in a pint glass... then add water.

If you're a bit bored with sandwiches you could vary it just a tad with pitta bread and make pockets! You can make them in situ to stop them going soggy by just putting filling stuff in plastic tub! Soups are good, but you'd probably need to fill up with bread, but a little change from sarnies.

If you've access to a microwave I'd take some of previous night's supper (I always make too much). Unless it's very hot should be ok 'til lunchtime, but think the tip by Itchy to put cooler sachet in would be best. I love salads, so usually take that but keep a dressing separate so it doesn't all go to mush. Rice salads and pasta salads should fill you up!

Wholemeal pittas are cheap and very filling without being stodgy. I do as you suggest and take a very small tupperware box with tuna, sweetcorn and philidelphia in (makes it loads nicer than just tuna and sweetcorn - and mayo = Sick ) and just stick it inside the pitta at lunchtime.

I'll do that for maybe 2-3 days and leftover chinese takeaway for 1-2. I've managed to get 4 decent meals out of leftovers before! Smile

Tortilla wraps are kickass too, especially with some cajun-y cooked chicken/onion and salsa in, they are expensive though and the chicken requires prep, unlike the tuna/sweetcorn/philly combo.

+1 for the pita breads. I find if you microwave them for a few secs they peel open better and don't break.

But atm I'm into all this tuna and sweetcorn pasta Smile

Cook some pasta then cool it. Put the pasta in a bowl and add mayo, sweetcorn and tuna. Then mix and just put some in a container each day.
