They look like dinner to me. Give one a go, cooked of course, and report back.

Do not let him release them into ANY watercourse. They are signal crayfish and are killing all our native crayfish.

They are fooking tasty tho, with a dill and cream sauce and a couple of slices of brown bread.

I think your boss might be a little pissed that all of his crabs have been stolen.

Mmmmm... crayfish... or crawfish, aka mudbugs as we call them here in the southern US. Quite a delicacy in the spring months. Boil them up with tons of cajun seasonings, some potatoes, lemons, onions, sausages and if you are feeling brave throw in some mushrooms and brussel sprouts but be warned, they soak up all the heat and will light your tongue on fire. If you cook them make sure you put them in some very salty water to purge them first... otherwise you are greeted with a poo filled intestine when you peel them. Sick
Otherwise throw one to your dog and watch the fun begin.

Well Mr Boss man found out about his creeies today, and asked where they went. We told him, and he said 'Meh, i'll get some more only took me half hour to catch all those.'

He then went on to tell us where he goes to get them.
So a thought has occurred to me...

How do I catch them?

I went crayfishing only last weekend. Luckily there was an expert there. Put some raw bacon in a mesh bag(washing tablet bag will do) and tie to string. Chuck it in the water and wait with a net. They scuttle out and grab the bag. You can just scoop them up with the net.

Pick them up by the upper back and they can't nip you!

Or make and set a baited creel. Leave it there overnight, pick it up in the morning.

Basically a mesh basket with a funnel leading ito it with some bait inside. They go in through the funnel, can't get back out again.

I reckon two shopping baskets and a flowerpot with the base cut out would do the trick.

Make a hole the size of the top of the flowerpot in one of the baskets. Tie it in the hole so the pot is projecting inside the basket. Cable tie the two baskets together. Choose a pot of a size that they can only just fit through the hole in the bottom.

The attitude of your coworker really pisses me off and is what's wrong with this country. People steal other people's possessions, without even knowing what it is that they're stealing and what to do with it, they just must have it.

And, of course, if there really were around 400 of them, most will go to waste.

Or, you could just use a Crayfish trap as you can buy them for around a fiver.
Obviously, for reasons outlined below, i'd never use one.....but a good friend of mine recommends them, bait them up with oily fish (seems to work better than offal/meat) and leave them overnight.

Excuse me a moment whilst i go and put my Hetzer hat on.........

that's better.........

The laws around trapping crawdads is one of the things that really fucks me off about this country, it's just ludicrous! Can't trap them without EA permission, but if you catch one, it's illegal to put it back, whilst you can't put them back, you also can't take them away to eat - just what the fuck are you supposed to do with it/them??
Who the fuck thought all that little lot up - Joseph fucking Heller?

Where i live, all the local waterways (especially the GUC) are absolutely swarming with the tasty little buggers. An overnight trap will usually yield about 20+ crays per pot, my friend sets out 4 pots (which he has to hide due to the legality/do-gooders), and this nets him plenty of craws to take home, flush, then boil up.

If not consumed at the boil (with garlic butter, lemon juice and either boiled new pots or crusty bread & butter), i favour a couple of Creole/Cajun methods for serving up all the tasty crow-dad meat - either a hearty Gumbo (over rice), or a Jambalaya.
