My bike manual recommends a tick-over speed of 1200 rpm. This was below that so it's duly adjusted. I was wondering, what benefit is there to increasing the tick-over? Does it allow for an overall better ride or is it purely for idling?

Adjusting the idling speed affects nothing other than the idling speed. If it was *too* low I suppose it could conceivably affect performance by fouling the plugs, if it was so low it was running lumpy, but the idle circuit is irrelevant as soon as you start opening the throttle.
