Our garden is overflowing with courgettes....having a bumper harvest. And my landlord has given me loads, because before I got my job I was doing most of the gardening. Thing with courgettes is, if you chop them up and freeze them, then defrost them, they go soggy. So the deal is to cook them then freeze the meal.

So far I've made courgette soup and courgette curry...anyone have some different recipes they'd like to share... Cool Thumbs Up

Cake, Apparently they go well in chocolate cake! Makes the cake nice and moist. My boss has shedloads too and struggles to get through them all. She's not tried it yet but cake is the next option!

Thanks...perhaps I should also add that they cannot have wheat, egg or dairy in the recipes...am mucho allergic. Thumbs Up

Skin, chop, add chopped onion, (and aubergine if you like it/can get hold of it for reasonable monies). Add lashings of basil, olive oil and garlic. Cook until it's lovely and soft, then freeze. I cook mine until it's mush, and serve it as a puree anyway, and it tastes -awesome-. You can add tomato (fresh or puree) for a whisker of colour, but it tastes great without. You can then use it either as a veggie side as itself, or as a base for pasta sauces or mezze stuff.

Alternatively, you can give them to meeeeeeeeeeeeee!

Been checking my two plants for the last two weeks and currently have three courgettes all of which are about an inch and a half long! Thought I'd be swimming in them by now.
Obviously not as good a gardener as I though!
