Treat it like Squash.

There are LOADS of things you can do with it.
You can make a pretty tasty soup very easily, or a lasagne (just add some goats cheese and cherry tomatoes).

First things first, chop it in half, hollow out the seeds.
I'd probably then dice it (chopping off the skin as you go).

If you want to make a soup, just slowly sweat down an onion, some garlic and maybe a little bit of a mild green chilli with plenty of olive or ground nut oil.
Lob in your bits of squash a diced potato, a tin of tomatoes, a stock cube, some nutmeg and tumeric (not essential but nice) and pepper. Cover the contents of your pan with boiling water and leave it simmering for about half an hour. Just check that the squash is soft, add a splash of milk and then blend it.
