As some of you know I bought grooves bike which has Gilles Rear sets which have a reverse shifting pattern so 1 up and 5 down instead of the other way round.

Does anyone know how to change it back to normal?

Contact gilles or the Uk distributor, they will be able to suply you with the parts required. I'd suspect a new lever and gear link rod will be required depending on the bike.
Some bikes you can do it just by rotating the arm on the gear selection barrel by 180 degrees.

Exactly my first thought. I remember seeing some info on setting up track day bikes some time ago, and they just rotated the linkage on the end of the gear rod...
