Basically as the title says, cant afford to do it yet but would be good to be ready armed for when i do Smile

Given a welder, an angle grinder, pipe bender, vice, files, a little tubing, bit of sheet, a bit of know how and a lot of skill.....
Almost anything you facied.... from a C50 engine up to a CBX-6....

pretty much any 2 stroke water cooled motor should go in with out too many hassles, a honda motor will give you the best of the mounts lining up
i beleive the cr500 motor etc is almost a direct swap, but there are expensive

OK....
Well, 250 single cylinder two stroke, much like what the frame was designed to wrap around..... mounts will all be in the wrong place as like, but filled with weld and re drilled and jiggled... shouldn't be too hard...
But surely rather easier to put a CR lump back in, for a 250cc two stroke single MX motor is what you want in there?!
