Always go to the legislation.

Crib notes: provisional entitlement is just as valid for riding a Hayabusa as a CG125, as long as you follow the conditions above.
If an insurers covers you, and you follow the terms of your license, you're covered.
Incidentally, if your DAS instructor isn't "carrying" his 65(4) certificate, then technically you are riding without a license. Show some love and ask to see it next time you're out. ____________________ Biking is 1/20th as dangerous as horse riding.

Worth asking if the instructor will come to you, as driving instructors do. There's no one-size-fits-all rule, as long as you're willing to pay for their time. ____________________ Biking is 1/20th as dangerous as horse riding.

Leaving aside the problem of finding an insurer who'll cover you on a DAS-class bike... why on earth would you do it?
You'll get nobbed on insurance, you're risking dropping your own bike while learning, and you're committing to a big-boy bike without any experience of riding one. Also, you've got no chance of getting test rides, so you'll be limited to sitting on bikes and going "VROOM VROOM!" before buying.
All this needs is "Should I get a Gixxer 600 or will I get bored too quick while learning on it?" ____________________ Biking is 1/20th as dangerous as horse riding.
