Talking about the Pillion footpegs here. I have a Jinlun 125 scooter.

For reference:
https://www.thescooterwiki.com/_media/scooters/directbikes/jl125t-12.jpg?w=&h=&cache=cache (Wow, that's an ugly colour.. )

The pillion footpegs are far too narrow for an adult's foot. The Pillion is having to sit with an instep to hold on. What's the red tape on extending these? I've heard stuff about sharp edges or 'sticking out beyond the indicators'.

The footpegs are at the back of the flooring, a little before halfway up the seat. They're far enough forward that when riding I can put my feet on them and they feel about the same as the rider footpegs on a normal motorcycle.

They're really just rubber stops. https://www.chinesemotorcyclepartsonline.co.uk/images/largeimages/135422019.jpg <-- For reference.
Would it be legal and MOTable to take these off and just bolt some longer metal bars on if I were to put some rubber over them?

Personally id just go ahead and do it. It will probably break some IVA regs but unless you intend on putting it through one for some obscure reason then there isnt an issue. No cop is going to do you on C&U's for some foot pegs unless they have knives on them!

Just pickup some cheap pegs on ebay and weld them on.

With regards to the MOT I dont even think pillion footpegs are mentioned (and if they are it will just be to check that they dont fall off) Could be wrong on this though...

The only thing looked for in the MOT regarding pegs is that if there is a dual seat then pegs must be present and secure, nothing else in there about them.

I'd suspect that so long as you don't use live hand grenades or sharpened spikes there is no reason you cannot change them, there are ratbikes getting MOT'd with worse. A bar will look shit though, welding on some pegs from another bike would look better.
