Anyone know of any tried and tested low calorie soup recipes??

Yes...I make soups regularly....but I don't really use measurements, I make it up as I go along.

Parsnip soup
A load of diced parsnips, two chopped apples, chopped onion, garlic...boil in water with a stock cube. Add garlic powder, cinnamon, black pepper, flaked dried coconut milk (from a block) or fungreek powder, boil then simmer. Add to blender. Serve hot.

To amend the Parsnip soup slightly, add mild curry powder instead of cinnamon. Gives it a different flavour.

Green soup
Half a cucumber diced, a courgette diced, a bunch of watercress, one potato diced, boil in veg stock cube, add a handful of peas. Add garlic powder, fungreek powder, black pepper (add watercress after other ingredients have boiled then simmered). Add to blender. Serve hot or cold.

Any old veg, peel and chop, bung it in. Add salt and random herbs. Boil to buggery, and serve. Serves 2-16, depending on what you happened to find in the fridge.

It's quick and easy to prepare, ingredients are cheap and it's very low in calories.

On a slightly more serious note, i do make a cracking mixed bean and chorizo soup, but i don't think it's especially low calorie. I tend to do it in my slow cooker overnight, and then take it to work in a flask the next day.
I got given a soup maker for Xmas, but i'm ashamed to say it's never been out of the box.

Just remember: soup boiled = soup spoiled.

I have never made soup to a recipe in my life. I have made a lot of soup.

Make stock using leftovers. Throw in whatever needs using up or was cheap. Bulk out with choice of carb.

I just made a lovely tomato-based soup today, and thought I'd share. Basically I roasted approx 8 homegrown sliced tomatoes in oil, with ripped fresh basil leaves and a generous sprinkle of cracked black pepper for about 30mins in 180 oven.

Then I grated one carrot, added a dollop of tomato puree, half a pint of water and a veggie stock cube to a blender. When the tomatoes were lightly roasted I added the whole lot to the blender and whizzed it for a while.

Poured that into a pan, then I added a little soya dream, then served when hot. It made three portions. So I might add some other veggies or noodles to the other ones to make slightly different next serving.

One large onion chopped
One large butternut squash peeled and chopped
Two veg stock cubes
One pint water
Dried herbs

Cook onion till soft and pint water and stock cubes and butternut squash sprinkle the herbs and cook till squash is soft
Blitz with a blender and enjoy
51 kcal for small bowl
