I've done ridge tiles before and after 15yrs they're still good.
I would've used a 4 to 1 mix using sharp sand..supports the weight when bedding the ridge tiles (mine were large and quite heavy).
Any building sand is upto the job and comes in many colours. Red would be fine. Too strong a mix usually results in cracking.
Keep clear of play sand and dried sand used in block paving.

Whoever told you 2:1 is useless, 4:1 or even 5:1 will be fine. As said to strong a mix and it will crack the tiles.
No difference apart from the colour. Probably have a load left over and don't use a lot of it and don't want to buy any.
