That time of the year innit. I have some sprout related questions, why do you have to peel the outer leaves and how many should you remove?

Cut the base off the sprout first, then remove any loose leaves (usually 1 or 2 layers) or yellowing leaves.

Thanks, next question.
Why sprouts on a stick? It has only been the last few years that you can buy them like this, my mate says they work out cheaper but I reckon there are about the same amount on a £1 stick as a £1 bag. my fridge is taken over by a sprout stick ATM.

Sprouts are evil they are mini cabbages.
The only useful thing they can do is be rifle targets.
Wifey loves them though & shares her pleasure a few hours later.
Slice the bottom stalk bit off, cut a shallow cross in the stalk & remove any loose and or manky leaves.
Cooked in a steamer is better than boiling.
Most folk over cook them.

Over-cooked sprouts are disgusting (bitter) and frozen ones are against the Geneva Convention, but fresh and properly cooked I like 'em. Remove the outer leaves, cut the deep cross in the stem bit then plunge them in boiling water in a pan until the water in the pan gets back to boiling for a couple of minutes max.

Meanwhile fry some bacon bits in a big fry pan (a wok is best) until they are getting crispy. Chuck in the sprouts and, if liked, add a sprinkling of dried chilli flakes &/ or pine nuts. I use some toasted sesame oil in the wok but I guess goose fat (has a high smoke point temperature) would be good as well. Must try that.

Keep the sprouts moving in the fry pan/ wok with high heat until they just start to brown on the odd outer leaf and seem soft in the middle when you poke them with a pinted knife (3-5 mins typically)

If you have bought sprouts on the stem (stick) you do not need to keep that in the fridge. They will keep fine for Christmas in an outside shed

+1 whilst working in a pub, I had to do a million of these and we tested a few before I got to work and there was no difference. Saved me cutting crosses in a couple of massive bags full of sprouts.

Best sprouts I ever had, Picked then from my garden, Christmas morning and still frozen. They didn't taste anything like the normal supermarket shite. Dropped them straight into boiling salted water for a couple of minutes only, they were sweet and so tasty.

The starter at my works do last week was sprout soup. Not quite as bad as it sounds, but even faster acting than normal sprouts.

I used to think that sprouts were the work of Satan. Like all green vegetable, they were at best a garnish.

But I like them now, mainly due to my wife's cookery method of light boil, stir fry with ginger/garlic/chilli/oyster sauce etc which she applies to any veg within reach making them palatable.

Windy though.
