Valves checks are not required that often on those engines, but at 50k there is a fair chance they have never been done and are well over due.
Spark plugs are a pain to change, but if you have it far enough apart to do the valve clearances I wouldn't hesitate to change them.
If you are concerned about the brakes then worth stripping and cleaning them, which means changing the fluid anyway. EXUP valve might be a git to remove to lube, and I would be careful that you don't shear a bolt off on it (and if you do, then take care you don't shear off a header bolt when removing the exhaust). Suspension linkages, steering head bearings, etc are worth stripping and greasing.
If you remove the swinging arm to grease the linkages and swinging arm bearings then I would consider replacing the EXUP cables while you are at it (think they go between the swinging arm and the engine with next to no clearance, so with the arm out changing them will be far easier).
Rest are basic service items. Oil change is already well over due by the sound of it.
