can't you just disconnect the choke cable from the carbs?

I got a GPz that had a spring that snapped the choke closed... there isn't a cable to the handlebar control, so I connected up a piece of wire (for testing purposes) which involved me pulling when I tried to start the bike. If you trace the cable back and disconnect the spring then the choke should be manually operated from the carbs rather than from the handlebars.... but as usual there should be someone that will contradict what I've said
