Now I know there's been a thread for people who enjoy growing peppers.
What's your favourite sauce?
For me, my recent addition to the cupboard that I've had several bottles of is cholula. Gives a pleasant and easy kick with good flavour to most dishes. Doesn't need to be diluted in cooking to enjoy. It's quite cheap, bought another bottle today for about £1.20
Got a couple of other hot, hot sauces that are more for mixing up with ketchup, lemon juice and mint sauce (lovely combination) for dipping/marinading that really set your mouth off.
Something i'd love to be able to get is that stuff from kebab houses. not the bottled crap, the minced veg stuff which tastes amazing.
So anyway what's yours? Not something for special occasions or ruining people, something you have frequently.
This isn't a show off thing, i'm really interested and would like to try some new ones, the range you get from tesco/asda is pretty limited.

As a standard chilli sauce, Encona Hot Chilli is the best. I have others for more specialised purposes.

Encona is for children IMHO.
My top two are Mr Naga obtainable from most Bengali stores review

Dave's Ghost Pepper Sauce obtainable online review

Both are Naga (Bhut Jolokia) based and hot but are full of real flavour.

Added to food I use fresh or in the winter frozen fruit, I am now self sufficient in chillis. Sauce is for sandwiches and dips.

I have some of this and was really liking it and getting used to the heat until it started to ruin my insides. I then decided to cut back on it, but now anytime I go near it I pebble dash the bog and feel queezy for the next hour or so. Its a shame as it is a really nice sauce

Encona is for children? Only because you've turned your mouth into a nuclear wasteland. Laughing I have Encona on toasted cheese occasionally, just to fuck myself up and clear my lungs. I sweat and pour tears.

My go-to for everything is Franks RedHot, which is pretty mild but I can actually taste it and my mouth doesn't feel like the US Marines mistook it for a Jap bunker and cleared it out with a flame-thrower.

I came across a chilli extract once it nearly killed me and destroyed a few friends its was call endorphin rush.

I avoid extracts, they have heat bit IMHO taste of chemicals, to me it is about the flavour first and the burn second.

I like this one from time to time, it has a real "American diner" flavour to it, hard to describe but it reminds me of my time in Montreal (not America I know but close). Great on things like hotdogs or cheese or eggs, or cheesy eggy hotdogs.

Love Nandos sauces... they actually make my boring food enjoyable.

I have Ultra Death and After Death in the fridge for stuff like sausages and burgers and that crap. Add it to pot noodles also.

Years ago I bought something called "Daves' Insanity" literally two drips in a stew and you've got a super ultra hot Bangalore Phall.

Encona I use like most people use ketchup.

Got this stuff today at a local cheap shop. It's not lying, one drop is sufficient to really upset your mouth. I imagine two drops would turn it into a nuclear wasteland. A liberal sprinkling would likely turn your entire head to molten lava...

yea encona is real tasty, pour a load of that on to a meat feast pizza and it's awesome.
I don't mean ridiculous extract stuff that you can only put a couple of drops in and just set your mouth alight, that's old hat.
Sauce with substance I mean. Also not Tabasco, it's wank.

I quite like Tabasco actually, it has its place. It's not very hot but I like its unique flavour, not many sauces mature in oak casks.

that windward stuff looks lovely, similar to encona by the looks of it. what's the franks redhot like? have seen it in tesco before but enjoy cholula too much to tread new ground.
and doug, i'v never really been a fan of tabasco, personally find it too watery and without much flavour.

Franks Red hot has a strong taste of additives. Not a full flavour. Neither a good thick chilli spicy sauce like encona nor a hardcore chilli sauce like some of those death ones. I only use it in dishes that require spicing up rather than a dip or on stuff because all I taste is the vinegar.
