Okay.

In what difference would acceleration and speedometre reading suggest, if using a 100/100mm tyre rather than 100/90mm on 18" rims front and back?

I would prefer 90mm, but they don't seem to make any for 18" wheels...

Urm... what?

You've got it wrong. If it says 100/90. That means it has a 90% aspect ratio. The aspect ratio is the tread width to depth ratio.

100/100 would mean the width is the same as the depth

What kind of difference in size is a 100/100 over 100/90 ? Physically, how much of an inch large either side/taller etcc

100 is the width, and the 90 states that the tyre is 90% as high as it is wide.

so the tyre would be 0.4 inches taller than a 90?

18" + 90mm (3.54") + 0.4 = 21.94"

VS

18" + 100mm (3.93") + 0.4 = 22.33"

In total diametre. That would be about equivilant to gearing up 1 tooth at the front right?
