'Stripped the back end down'?
What does that mean?
You took the back wheel out? You removed teh swing arm? Took the mudguard off perhaps? DONT give us much to go on.
Squeeky brake.... have you trapped a mouse in the brake torque arm?
Otherwise, IS it the brake? Is it wheel bearings? Is it the brake back plate not sitting straight in the drum? Is it the shoes in the drum? Are they properly aligned ON the pivots? Have you pulled the cam out of line, so they are sitting 'cock' to the drum? DID you adjust torque arm and actuation rod when you pulled it apart/put it back together, so the shoes are rubbing? Did you clean out all the brake dist? Did you dislodge brake dust in the webs at the back of the drum, and not get rid of all of it, so you actually have more 'crud' floating around in the swept area?
Known fault on CG's is the brake pedal pivots on same pin as the centre stand... did you remove stand and pedal & grease?
When you adjusted, we presume you diod it bike on Centre stand, but lifting stand up, is that dragging teh brake 'on' a bit?

You've put the springs on the brake shoes wrong, either on the wrong side of the shoe or got them swapped around (if they are different shaped springs), or even one of them needs flipping end for end. When you do this the coil of the spring scrapes on the hub of the drum.

Riding with dodgy brakes is bad.
Riding when you know your brakes are dodgy is worse.
