How do I go about taxing a (new to me) bike that has no tax, nor SORN, nor any reminder forms etc?

I have the V5 (yet to be filled out) and will shortly have the insurance print out and current MOT.

Is this sufficient or do I have to fill out any other shite to get a tax disc at the post office?

Just need proof of insurance, MOT certificate and V5/new keepers slip.

You will be able to do it online with the V5 reference number but I don't know how quickly it will realise you've insured the bike if done today.

Sometimes it can take a few days, probably best do it the old fashioned way at the post office if newly insured. Unless you're not arsed about riding it for a few days.

Take MOT, insurance and V5 to post office. Tell them you want to tax your bike. Hand them money, they will hand you a tax disc.

Simple.

I am in the same boat, insurers sent me docs but I have no printer so waiting for V5 to come in post then taxing online using the V5 doc ref.

Darn, I was going to suggest that you just show it to them on a phone or laptop or other doodad, but I see we're still stuck in the steam age. The requirement is:

(aa)a legible printed copy of a certificate of insurance delivered by electronic means;

They'll check that the name on the V5 matches the name on the insurance document. It does make life easier to have the green V5c slip to show them with your name and address on it.

Post office counter can scan the barcode (assuming it was a red V5) so as long as you have that, an MOT and the certificate of insurance you should be alright. I'm just off to do the same for my Pan European Thumbs Up
