OK I done the 'fuck you up' red wine.... the ginger beer ended up a 4 pint knock you on your arse strength... since a lot of friends aren't wine drinkers... and most of them can't stand ginger... I decided to start a safe drink....
Alcoholic lemonade
The recipe:
30 lemons grated and boiled for 1 hour, 1kg sugar added to boiling water then removed from heat when the sugar disolved.
48 hours later sieve liquid into fermenting bucket then wash pulp twice more to remove any residual sugar/flavour.
Topped fermenter to 23 litres adding an extra 2.5kg of sugar (disolved in boiling water)... hydrometer gave a reading of:
sugar 210g per 1 litre
approx ABV 12.5
start gravity 1.78
All well and good I thought... I'd added 5g wine yeast and 2 rounded tea spoons of yeast nutrient.... fermenting started within an hour.... 24 hours later the air lock seems to have reversed (rather than the mixture creating gas it's creating a vacuum).
I've heard that it's possible to over feed the yeast, or the acid can shock and kill the yeast... but I was hoping for a bit of advice here.
OK I paid about £6 for the ingredients and if it fucks up then I'm not going to lose any sleep... but in an effort to save things I crushed and added a 300mg zantac to the mixture (to reduce the acid), plus 2 more tea spoons of nutrient and added a bit of heat (the flat is quite chilly) to bring it closer to 28 degrees centigrade around the fermenter.
I've heard about adding baking soda to bring the acid level down... anyone else made boozy lemonade that can give tips? |

Don't go adding pills to booze man!
Watch your gravity as it comes to the end as that'll ferment out drier than a nuns crack. I'd be tempted to stop it around 1.010 to have some sweetness left.
