OK folks, this cam causes the throttle to open when the bike starts up, and then gradually closes, making me think it has something to do with the auto-choke? The cam also rotates when the throttle is applied, and returns when the throttle is released.

The problem I have been having is that there appears to be an adjusting nut missing on the adjuster for the "thing the cam acts on", which applies pressure to the same control which the throttle cables are attached to.

This has left the throttle not cutting off, and my needing to physically twist the throttle grip to the closed position to kill the revs.

First question, what is this, second question where can I find a nut small enough to fit the adjuster for the "thing the cam acts on", and third question, what should I be looking for in terms of adjustment? Should the engine rev a certain way when the throttle grip is released?

2nd picture. I presume you are talking about that bolt that is getting used as the adjuster. You want a lock nut? Are you shure its not on the underside and if not i am sure if you take the bolt out Halford or screwfix will sort you out. Bet i have one in a tub under my sink. I keep shit like that.

It's the thing I've marked in red just on the other side of that plate bit, its a very small bolt, with a very tight thread. I doubt I can take it out easily as it's got a spring acting on it, and it may be a bugger to get back in properly.
