sprocket/gearing on my 2004 R30 mamba..

Mornin people,it may be obvious to some but what is best gearing (teeth wise) for quick blasts round short tracks etc,im not interested in top speed as 3 points is enough for me,also what are "gubbins" and what things could i do to improve low end performance on my bike?,it had a k and n fitted and aftermarket exhaust on it when i bought it but im not sure how to or wether to have jetting altered because it seems a bit "lumpy"????
