Still running downgeared TLR on Supercorsa SPs.
I prefer predictable front grip and negligible back grip for shitty conditions personally if you have to 'make do'
Would go for the dragon front tyre of the ones mentioned. If you aren't particularly confident, selling the two new tyres you have and putting the money towards a set of PR2s and engine bars might help.

Personal opinion
DIY. I always fit my own tyres - car or bike. Go to any place that fit tyres and see if they'll sell you a tub of tyre soap - maybe cost up to about 15quid, but that's less than a lot of places charge to fit a single tyre (and a cheap paintbrush to put it on). I got tyre levers from poundland which are acceptable after filing to remove sharp corners etc.
'Breaking the bead' to remove tyres can be tricky and takes a bit of practice unless you can get or make a bead breaker. Doing it by hand, soap up the rim and bead for removal, push the tyre bead into the rim well and work it over.
For fitting, use a new valve if you can, they're only a quid or so each - or at the very least properly check the old one - cut the old one out (cut off the bit inside the tyre and it'll pull out by hand), soap the new one and pull it through from inside using something like a pushbike handpump tube as a handle. Soap up the new tyre and put it on, making sure the first part that goes on sits in the 'well' in the middle of the rim. There is usually a coloured blob on a new tyre (can wear off partworns though) and if you line this up with the valve you usually don't need to bother with balancing. Inflate the tyre until it pops into place - if you have to go above about 50psi to seat it, let the air out, apply more soap to where it's sticking then inflate again. Then adjust the pressure as required.
Once you get the hang of it, it's an easy job.
