I've got a few pipe dreams, one to drive a kenworth w900 in America for a living, that's what I wanted to do when I was a child. Another was to go to Japan and study robotics, was never going to happen. Finally to go to Russia by bike. This one I'll save up for and if I live long enough I'll do it.

Be an airline pilot
Be a streetcar driver
Be a games reviewer

All childhood dreams.

Being an owner-operator truck driver like the OP suggests still appeals, the obesity and loneliness aside.

I'd love to fly helicopters, so being one of those guys who owns one and flies rich tourists around tropical islands and up to volcanos would be great.

Then I wanted to be Ayrton Senna (I don't any more, being eaten by worms isn't my thing)

Now all I want to do is retire..... Sad how becoming aged takes the passion from your life.... sob

On a more serious note, visit pretty places, as many as I can. I've been lucky enough to be able to visit many places that are stunning. Would love to visit a load more all over the world.

Flying a helicopter
Travelling across Europe for a couple of months, going from home all the way to Greece and back again. (could be possible).
Winning the lottery and paying off all my families debts and then helping others.

I'd like to go racing one day, maybe Supersport 600 or something. I'm not really quick enough, but it could happen one day.

When I was a kid I alternated between wanting to be an Astronaut and James Bond. I figured a military career was the best way to either of those things, so I settled on wanting to be a fighter pilot in the RAF.

Needless to say this did not happen. I'm not so bothered about flying now, I'd perhaps like to get my glider pilots license or something but at the moment I'm happy with pitbike racing.

I'd also like to learn the whole system in Lee Sing style Wing Chun Kung Fu, but the problem is work and other life things tend to get in the way. If I won the lottery I'd probably just train Kung Fu and do trackdays all the time. That would be a good life.

Getting my self-employment to a stage where I can work from home. This has taken a back seat as I started a new job a year ago which has plenty of option for career progression, but I will try to get it back on track.
Maybe go back and get a degree at some point as mine didn't work out due to circumstances beyond my control.

Other than that, not much else. Job's good, comfortable enough, got married a few months ago, not sure what else I'd want to change really! Pretty happy with my lot.

Work as a bush pilot.
I saw something on telly where this guy was cargo lifting stuff by cable under a helicopter to and from a remote mine in Greenland in fairly high winds. Properly mental.

Just like the OP, all these sound doable - some easier than others, but not exactly the stuff of wild abandon!

I dream bigger... I want my own private island in the sun, a seaplane to get me there and back and a house in all the major cities that I'd like to visit. Maybe up sticks once a week for a change of scenery...
