We've got plans drawn up and a quote for a loft extension with dormer,

We need to fulfil the requirements of the party wall act and notify our neighbours but I can't seem to find, despite reading .gov guides, a straight forward answer on what we need to do to not leave anything uncovered etc

Contact a surveyor, if your plans were drawn by a professional they sould know one locally.

we've got planning permission through, we've got a structural engineer's report as part of the bundle of paperwork - it's literally the legal requirement to get permission from our neighbours to proceed as we're a mid terrace.

But I'm worried I'll miss something out and it bite me in the ass later

There are specimen letters that you can cut & paste on the party wall site. It's called (bizarrely) the Pyramus & Thisbe Club. Really useful source of advice to make sure you cover everything.
