CC doesn't matter it's the power to weight ratio and total vehicle power output you are restricted to in the UK. You are allowed to have up to 46BHP/35KW either restricted down from no more than double that, so 92BHP/70KW. And you can't exceed a power to weight ratio of 0.26bhp/0.2KW per KG. You may find that this rules out bikes like the KTM EXC 250. The DRZ 400, at 39BHP and 145KG's, wet, comes in with a power to weight of 0.27bhp per KG. This means that the ever-so-popular trailie of choice for the old A2 holder with 33BHP restricted, is no longer legal with the new licence laws. You would need to restrict it to about 37BHP to get the legal power to weight ratio. And the DRZ is a heavy, underpowered trailie. Something Like the Husqvarna WR300 is about 55hp and 105 kilos, I think.
Having said all that, most bikers have no idea about the new licencing laws so your average traffic cop will not have a clue unless, they specialise in bikes.
I wouldn't want to do the trip on an enduro bike. The maintenance schedules are far too tight for that distance, you'll be changing the oil every 600-1000 miles, probably change have to change your piston halfway there. The seats are so thin, you couldn't sit on them all day. I would do the trip on something like a sensibly modified DR350, wider seat, lower maintanence, but still about 30HP and about 130kg so a power to weight of 0.23bhp/kg. So that would be legal as well.  But even still a DR350 will need the oil changing every 1500 to 1800 miles, if not ridden too hard.
Any bike would do it really, you'd just need to plan the route to assist your bike choice. For instance, a C90 is an awesome weapon for everything, but you would avoid motorways on one of them and avoid piling it up with stuff you think you might need, but inevitably won't due to a small engine. Whereas a big Tiger 1200 would have all the engine you need but be heavy if you do any off-road and if you have any breakdowns, you won't be able to fix it with a paper clip and gaffa tape like you could a Cub, so bear that in mind as well.

First off; enduro usually means a competition bike (for doing enduros on  ) and 300cc is usually a 2 stroke.
Do you plan to go off road?
What's your budget?
